Vegan Flaky Crust Phyllo Pizza recipe (referenced in episode “Happy 53rd Birthday to Me!“)
- 1 block Miyoko’s plant-based butter
- 1 box vegan phyllo dough (most brands are vegan
- 8 TBSP nutritional yeast or Nooch-It vegan “parmesan” alternative
- Sliced Roma tomatoes to cover (about 12-15 tomatoes depending on size)
- Fresh herbs (basil, oregano, thyme….dried would work too)
- Aged balsamic vinegar to drizzle
- Salt and pepper to taste
- Miyoko’s plant-based liquid mozzarella (optional)
Preheat oven to 375 degrees Fahrenheit. Brush a cookie sheet or 15×10 sheet pan with melted plant-based butter. Place 3-4 sheets of phyllo on top of butter. Drizzle with more melted butter and brush to cover. Sprinkle with a few tablespoons of nutritional yeast (I like Nooch-It). Repeat this process by covering with more sheets of phyllo, butter, and Nooch-It about 3-4 times, then top the final layer with sliced tomatoes. If using, drizzle with liquid mozzarella (this step is totally optional). Then top with another sprinkle of Nooch-It, the fresh (or dried) herbs, and drizzle with balsamic.
Bake until crust is crisp and golden brown at edges about 30 minutes. Use knife to slice into large slices. It is crumbly and messy….but it IS delish!
